Chia pudding makes a delicious, filling, and nutritious breakfast or snack. Chia seeds are considered to be a nutritional powerhouse. The tiny seeds contain Omega 3 fatty acids, fiber, protein, antioxidants, and minerals such as potassium, magnesium, calcium, and iron. Chia seeds absorb liquids to create a fun tapioca pudding-like texture. Although there are many variations you could do with a chia pudding recipe, this one with spirulina and cacao is my personal favorite. Spirulina and cacao are also superfoods in their own right- spirulina boasts an arsenal of vitamins and minerals, while cacao overflows with antioxidants. This bounty of nutrients will have your cells singing with joy! Enjoy.
Chia Cacao Spirulina Pudding
- 2 ½ cups almond milk
- ½ cup chia seeds
- 1 teaspoon vanilla extract
- 1 teaspoon spirulina powder
- 1 teaspoon cacao powder
- 2 tablespoons maple syrup
In a 1-quart jar, stir together the chia seeds, cacao, and spirulina powder. Add the almond milk, vanilla, and maple syrup. Stir liquid and seeds together. Close the jar and shake to combine. Refrigerate until very thick and pudding-like, at least 4 hours or overnight, shaking or stirring occasionally. May be served in a bowl or enjoyed from a glass.
