Chicken Tacos with Avocado Salsa

Ingredients :
1 lb boneless chicken breasts cut into strips
1/3 cup water
1 medium avocado, cubed
1 tablespoon avocado oil
1 cup canned corn
1 cup cherry tomatoes
1 tablespoon chili powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
2 teaspoons lime juice
2 tablespoons chopped cilantro
8 taco shells or tortillas
Instructions :
- Heat large skillet over medium high heat and add oil. Brown chicken and then add water and seasonings. Cook 4-5 minutes until chicken is cooked through.
- While chicken is cooking, mix avocado, corn, tomatoes, lime juice and a dash of salt & pepper. Add chicken mixture to shells or tortillas and top with avocado salsa. Top with additional spritz of lime juice and cilantro. Serve immediately.
